ALL THE GOOD STUFF IN EVERY BOWL

WHAT IS CHASHU?

Chashu is a Japanese braised pork that is tender, salty, yet sweet and melt-in-your-mouth. This delicious pork is the Japanese variation of the Chinese BBQ pork known as Char Siu. Chashu is an important component of ramen, a staple Japanese dish. Leftover chashu are then used to make “chashu don” - pork belly served over white rice.

TRADITIONAL FLAVORS. MODERN TASTE.

Our pork belly bowl is inspired by the Japanese chashu. We slow-braise small batches of pork belly in sweet soy sauce to achieve the perfect melt-in-your-mouth texture. Every piece of chashu is then hand-torched to add a layer of smoky, caramelized crust. Want to take it to another level? Add a fried egg to make it into a full, hearty meal.
